These are short ribs—flanken style—and they’re ready to change the way you think about beef.
Popular in Argentina and Uruguay (Asado de Tira, if you want to impress your butcher), flanken short ribs are cross-cut across the bone into thin, grill-ready strips. Ours are cut thinner than most—about 3/8"—which means they sear up fast and flavorful, with each piece offering that perfect mix of meat, marbling, and just a touch of bone for extra richness.
Toss them on a hot grill, bone-side down, and let the magic happen. They cook quickly, crisp up beautifully, and deliver big flavor in every bite. And yes, when you open the vacuum seal, you might notice a little “confinement odor”—completely normal. Just let them breathe for 10 minutes, and they’ll bloom right back to that vibrant, fresh-off-the-farm look and smell.
Ferry Farms – On the farm and on the fork, it’s better quality. Period.
