This cut comes from the triangular section of the sirloin primal, where the sirloin meets the round and flank. The name says it all: Tri-Tip = Triangular = Three tips. Known for its excellent marbling, this approximate 2.5 lb cut delivers a juicy, beefy flavor that shines whether you’re grilling, smoking, or roasting it in the oven.
While this cut is perfect for grilling, it’s also amazing when smoked or roasted to perfection. The tri-tip is best cooked to medium for optimal tenderness, so be sure not to overcook it.
